Ingredients

  • 1 can chickpeas
  • 1/2 cucumber
  • 50g Feta
  • 4 slices bacon
  • 1 red onion
  • A handful of fresh mint
  • 170g Risoni/Orzo Pasta
  • Olive oil

Preparation

    Bring orzo to a boil in a small pot with approx. 500 ml of water and cook for about 10 minutes – or prepare according to package instructions.

    Meanwhile, fry bacon in a little oil until crispy, then drain on paper towels.

    Drain the cooked orzo and place it in a large bowl. Drain chickpeas, dice cucumber, chop herbs, slice onion into fine strips, crumble feta, and mix everything together with the crumbled bacon into the orzo.

    For the dressing, mix olive oil, lemon juice, pressed garlic, honey, salt, and pepper, then pour over the salad. Mix everything well and enjoy.
