Cut the feta into 6 strips, about 5 cm long.

Finely chop the red onion, fresh mint, parsley, and oregano. Soak the toast in a bowl with 50 ml of water. Add the chopped herbs, onions, a pinch of pepper, 1 tsp salt, the lemon zest, the egg, and the minced beef, and mix everything thoroughly to form a uniform mass.

Divide the meat mixture into 6 equal portions. Form each portion into an oval patty, place a piece of feta in the center, and firmly enclose the cheese with the meat to form elongated patties (bifteki).
Chef's tip
Serve the bifteki classically with tzatziki, cherry tomatoes, and finely sliced red onion rings. Crispy potato wedges or a fresh Greek salad also make a good side dish.
