We are Matthias and Michael, two farmers from the Tullnerfeld. We farm using organic methods as much as possible. To avoid wasting energy and food, we only resort to targeted treatment in an emergency. For example, if there is a threat of a complete crop failure. Similar to how a doctor prescribes a medicine only when it is necessary. Due to the extra effort involved, our prices are somewhere between organic and conventional. We want to be able to afford to go the best way, not the most cost-saving way.

Product description

Batatoes or sweet potatoes are perennial plants that creep bushily along the ground, their fleshy rhizomes thickening into potato-like tubers. However, there is no relationship with the potato or the Jerusalem artichoke, which also forms tubers in the soil. The inside of the roundish spindle-shaped tubers is slightly mealy, whitish or yellowish to red in colour and has a sweetish taste.

Origin

The home of the batata is Central and South America. It is cultivated in almost all warmer countries of the tropics, subtropics and temperate zones of the world. The largest batata producer in the world is China. Batatas are grown and harvested throughout the year. The largest supply on the German markets falls in the warm season. Significant suppliers are Brazil and Israel.

Tips

Red-fleshed sweet potatoes are considered the best in terms of cooking properties and flavour.

Preparation

Common preparation is as follows: wash and peel the batatas, pierce several times with a fork, rub with oil and bake in foil or cook in the oven with the skin on. Prepared in this way, sweet potatoes are an excellent accompaniment to fish and meat, especially game.
