Behind echt-Schreckbauer is the master butcher Sepp Mayer and his organic farm Schreckgut ("Oberseidl") in Bischofshofener, Gainfeldtal. Here - on a farm that is over 300 years old and about 1000m high - he breeds organic cattle, organic sheep and free-range pigs together with his family. The farm butcher's shop is also located directly on the farm. This was optimised and expanded in 2022. This means that high-quality products can now be created. "Sepp" is particularly proud of the new climate-controlled rooms and the maturing room for dry-aging, in which prime cuts of organic beef and free-range pork often mature for weeks to optimise taste and tenderness.
