The Lion's Mane mushroom has been a highly valued edible mushroom in East Asia, especially, where it is best compared to the meat of veal or poultry. In addition, there are delicate, fruity coconut and citrus aromas. The consistency of the round-oval, white to yellowish-gray mushroom resembles that of seafood. The stem is usually only short and the entire fruiting body is densely covered with very soft spines up to six centimeters long.
Thanks to its delicious aromas and firm consistency, the Lion's Mane mushroom is suitable for a wide variety of dishes. Diced, for example, it can simply be fried in some good oil, braised or stewed and you have a real delicacy. It also goes wonderfully with vegetables, light meat, fish and seafood. And of course it also cuts a fine figure in soups. It is also often sliced, breaded and prepared like a vegetarian schnitzel.
The Lion's Mane mushroom is also known by such names as Pom-Pom blanc, Lion's mane or Coral mushroom. In appearance, it resembles the head of a Chinese monkey, which is why another of its names is Monkey Head Mushroom.
Don't worry if there are fine white threads on the Lion's Mane mushroom. This is not mold!
The seeds of the mushroom (spores) germinate and form a new mycelium, which is just as edible and tasty as the fruiting body itself. You can simply cook these threads (mycelium) with them, they will dissolve with it.
Storage recommendation
Mushrooms should be stored in a cool, airy place. An air-permeable container in the vegetable compartment of the refrigerator is best for this.

Their mushrooms grow in a resource-saving way in a small space in the beautiful Vienna Lobau and in wine cellars in Klosterneuburg. They need very little energy - and most of the energy they need can be produced with their own PV system.
Mushrooms that are not sold as fresh produce as quickly as possible are processed by Hut & Stiel into vegan organic products such as pesto, sugo, goulash, spread and sausages.
Their vision is to turn mushrooms from a side dish into a main course and to increase the popularity of mushrooms as a healthy and sustainable alternative to meat.
