omami is like tofu, but made from whole chickpeas and coated in a wickedly good marinade. It is produced without soy, is full of vegetable proteins, is gluten-free and is delicious to die for. How good is that?

Happy omami recipe: Tofu gyros with flatbread
For 2. Ready in 30 minutes
Ingredients:
For the yoghurt sauce:
- 150 g natural yoghurt
- 3 tbsp mayonnaise
- 2 tsp lemon juice
- 1 tbsp olive oil
- 1 clove of garlic, finely chopped
- 30 g fresh parsley, finely chopped
- 30 g dill, finely chopped
- Salt & pepper to taste
For the gyros:
- 3 tbsp frying oil
- 1 pack of omami Greek Salsa Tofu, cut into thin "gyros pieces"
- 1/2 large onion, cut into 2 mm thin rings
- 3 cloves of garlic, finely chopped
- 10 sprigs of thyme
- 3 tbsp soy sauce
- 1/2 tsp pepper
For the rest of the filling:
- 1 large Turkish flatbread
- 250 g red cabbage, cut into fine strips
- 4 lettuce leaves
- 1/2 large onion, cut into 2 mm thin rings
- 2 tomatoes, cut into 3 mm thin slices
- 1 mini cucumber, cut into 2 mm thin slices
Preparation:
- For the yoghurt sauce, put all the ingredients in a small bowl and stir until creamy with a spoon. Season with 1 pinch of salt and pepper and set aside, covered.
- Knead the red cabbage strips with 1 tsp salt in a bowl until the liquid comes out. Drain over a sieve.
- Heat 3 tbsp of frying oil in a pan, fry the tofu gyros and half of the onion rings for 5 minutes. Add the thyme leaves, garlic and pepper, braise for 5 minutes. Deglaze with soy sauce and simmer briefly. Remove the pan from the heat and stir.
- Halve the flatbread and cut into 2 equal triangles. Then toast in a toaster until crispy and use a bread knife to cut from the tip to just before the outer edge and carefully open it up so that it does not break apart.
- Spread the yoghurt sauce on the inside of the bread and fill with all the ingredients. Finally, spread the yoghurt sauce on the filled flatbreads as desired and serve the rest of the yoghurt sauce in a small bowl.
