Caviar from the Siberian sturgeon (Acipenser baerii), from Italian aquaculture.
Siberian Classic is a caviar that is obtained from the Siberian sturgeon. A medium-sized fish weighing between 8 and 40 kg, which originally occurs in the river basins of Siberia (from the Ob to the Kolyma) and in Lake Baikal. This caviar has a strong character and is very versatile in the kitchen.
The size of the egg varies depending on the age of the sturgeon (2.5 to 3 mm) and its colour ranges from grey to amber. It goes well with potatoes, sour cream, crème fraîche, soft bread or, in the most traditional Russian way, with blinis. Recommended combinations: Brut champagne or dry white wines, mineral wines and vodka. The harvest time for this caviar is 8 years.

About the producer:
Calvisano is a typical small town in the middle of the Po Valley in the province of Brescia, an area that is rich in fresh spring water. The name comes from the Latin Calvisius, an ancient Roman nobleman and great gourmet.
The unique properties of the pure water in this area are the basis for the excellent ecosystem for the sturgeon, which gives Calvisius caviar its authenticity and freshness and makes it one of the most exquisite delicacies in world cuisine.
