Skrei - der Edelfisch aus der Barentsee

1-2 pieces of Skrei Winter Cod Loin (middle piece) with skin.
Skrei, the Norwegian Winter Cod (Gadus morhua) is a culinary delicacy. It lives in the arctic Barents Sea. As soon as it reaches sexual maturity at the age of 5 to 7 years, it migrates well-nourished from the icy Barents Sea to spawn over 1000 km to the Norwegian Lofoten Islands. Here it uses the slightly warmer water of the Gulf Stream (4 to 7 °C) for reproduction off the Norwegian coast. This migration takes place every year in the winter months from January, sometimes not until February, to April.
The name "Skrei" comes from Old Norse and means "to move forward or migrate".
New generations of cod return to the Barents Sea via natural ocean currents after spawning to grow up and one day, when they are fully grown, return to the Lofoten area to repeat the cycle.
Taste and preparation:
Lean, tender and firm flesh with strong, flaky segments. Mild, slightly salty taste.
Skrei can be perfectly steamed, poached or fried. If you lightly salt it 30 minutes beforehand, the flesh will firm up and the fish will be easier to handle during preparation.
