The home of the aubergine is tropical East India. Like the tomato, it belongs to the nightshade family. Most aubergines have a pear-shaped form and a dark purple colour. The vegetable loves warm temperatures.
Use
Fresh aubergines have a firm, shiny skin and a green stalk. Small fruits with a diameter of 5 – 8 cm taste best, large ones are more tart. Aubergines are just as good for stewing as they are for steaming, roasting or grilling. The slightly bitter taste of aubergines is often found to be unpleasant. To reduce it, sprinkle aubergines with salt and thus bind the bitter substances. To do this, first wash the vegetable thoroughly under running water and cut it lengthwise into not too thin slices, the aubergines are not peeled. Now sprinkle the slices with salt on each side, place them on a wire rack and let them rest for about 10 – 15 minutes. Then rinse the slices under running, cold water and dry them carefully with kitchen paper. For some dishes, it is also sufficient to salt the aubergines or boil them in salt water. Aubergines are not suitable for raw consumption.
Storage
Aubergines should be stored in a dark and cool place. However, they should not be stored below 5 degrees, so aubergines can be kept fresh for up to 2 weeks. In principle, however, aubergines should not be stored in the refrigerator.

Our farm is located in the Lower Austrian region of Tullnerfeld. We love the varied work with and in nature, the fields and meadows around the farm and life on the outskirts of the city.
Since our way of working includes a lot of mindfulness towards nature and careful handling of the soil, we also try to pass on these aspects to our customers by imparting background knowledge and working techniques in modern agriculture.

We produce a wide range of products, including oil pumpkins for our pumpkin seed oil and our nibbling kernels, but also garlic, fruit vegetables, wheat, corn, soya and sugar beet.

Aubergines are one of the vegetables that are sensitive to cold and should therefore not be stored in the refrigerator.
