Whole tongue from Austrian veal.
The tongue is one of the main ingredients for the traditional Viennese dish, Kalbsbeuscherl. Gently cooked whole, chilled and the skin removed, it can be processed into many other dishes. For example, thinly sliced for an appetizer.
