Whole kidney in a fat coat (frozen) from Austrian veal.
Excellent for preparing a veal kidney roast, a classic of traditional cuisine. The kidney roast is classically made with the veal loin, but the kidney can also be wonderfully incorporated into a roulade. Freed from fat and cut into pieces, it can also be used to prepare "sour kidneys".
