Preparation tip:
The veal knuckle rosé is actually nothing more than a boned and then re-shaped veal shank – the juvenile stage of a beef shank. Similar to this, this well-trained part is also richly veined with tendons, which only transform into soft, juicy gelatine during a long cooking process. The roast can be cooked in the oven at a low temperature. If you also fill this knuckle with fine mushrooms and herbs, the inexpensive part becomes a real festive roast.
