Whole veal fillet (without chain) from AMA certified Kalb Rosé Austria.
Preparation tip:
From the thicker fillet head pointing towards the hip, tender veal fillet steaks or veal medallions are cut, from the middle piece the best fillet steak and from the fillet tip strips or meat for fondue. Since the veal fillet is very tender and low in fat, veal fillet steaks should never be completely cooked through, but should remain at least slightly pink on the inside. Overcooked fillet meat not only becomes unsightly grey, but also dry and loses its fine taste. This also applies to the preparation as a whole.
