Ginger is a tuberous, branched rhizome that can grow up to 20 cm long and have a diameter of about 3 cm. They are beige or light brown, light yellow on the inside with slightly fibrous flesh. Ginger has a spicy and burning taste.
Origin
Its home is the humid tropical rainforests of East Asia. Later it was cultivated in India as a spice and medicinal plant. Today's growing areas are India, Malaysia, China, Kenya and Brazil.
Tips
Unpeeled, a fresh ginger tuber will keep for several weeks in the refrigerator. Peeled tubers should be covered with dry sherry to keep them fresh and juicy.
Preparation
The preparation is very simple: break off a piece of the tuber and scrape off the skin. The pulp is then grated, cut into thin slices or small cubes; it gives many dishes a fiery, exotic touch.
Storage recommendation
Fresh ginger will stay fresh for several weeks if stored in foil or a container in the refrigerator.
