Hind shank from the AMA young bull without bone. The shank is also called calf shank or calf ham. The meat is marbled with tendons and connective tissue, making it ideal for slow braising. Whether whole or diced for a hearty goulash or ragout. A real highlight for true connoisseurs that melts in your mouth.
The meat from the Austrian AMA certified young bull is an absolute all-rounder in the kitchen. The young cattle are allowed to grow to a maximum of 20 months and are therefore particularly tender and fine-fibred.
Born, raised, slaughtered and processed in Austria.
