Organic brook trout (Salvelinus Fontinalis) are among the most popular native fish and are particularly distinguished by their very aromatic, tender meat with a firm consistency.
During the spawning season of the fish (October - January), the skin of the male char turns a strong orange, while the female char remain greyish.
The cleaner the water and the lower the water temperature, the tastier the fish. In Deleva's ponds, the water from the springs flows directly from the Hochschwab massif and offers ideal living conditions for the fish. The fish grow slowly. They need 2.5 to 3 years to reach a size of 1 kg.
Preparation:
An organic brook trout fillet is suitable for a variety of preparation methods, such as pan-fried, baked or steamed.
With a little oil in the pan, the fillets are fried starting with the skin side until they are really crispy. Then the fillets are turned and only briefly cooked on the tender meat side.
Tip: Fish is ideal for people who want to eat a balanced and conscious diet. Fish provides high-quality protein and contains many vitamins and minerals. Due to its low-fat meat, it is also ideal for diet menus.
