The peel is suitable for consumption. The green color of the lemon does not mean that it is unripe, no, with early lemons this is the sign that the lemon is just ripe.
Origin
The evergreen lemon trees grow up to 7 m high. Their fruits, the oval to egg-shaped lemons, are usually bulging at both ends or nipple-shaped. They weigh 50-125 g, and their skin is rough to almost smooth and strong yellow in color. The inside of the fruit consists of 7-10 compartments, with a different kernel content depending on the variety. The very juicy, watery to pale yellow pulp tastes sour and aromatic.
Lemons were already known in China before our era. After they were brought to Europe by the Arabs, it was Christopher Columbus who brought them to the New World. Since lemons do not like it too cold or too warm, they thrive best in the subtropics and temperate zones. The main growing areas of the lemon in the Mediterranean region are Italy, Turkey, Greece, Israel, Cyprus and Spain.

Preparation
The lemon is the least dispensable from our kitchens, although its pulp is practically not consumed. The slightly sour taste of the fruit juice and the seasoning power of the lemon peel give many dishes the finishing touch. The fruit juice is used, for example, in salad dressings, with fish and meat dishes, in creams, cakes, pies and other baked goods, jams, lemonades, etc.
Storage recommendation
To keep lemons fresh and aromatic at home, store them at room temperature if you consume them within a week. For longer storage, put them loosely packed in a plastic bag and store them in the refrigerator, away from other fruits and vegetables, as they could spoil faster due to the ethylene.
