Product description
The sweet potato is a tuber plant, but not related to the classic potato.
Its leaves and shoots grow as a convolvulus (like cucumbers, courgettes, ...). The botanical name of the sweet potato is Ipomoea batatas.
The sweet potato with juicy flesh has a sweet taste and can also be eaten unpeeled and raw (like carrots, for example).
It is recommended to store the sweet potato at room temperature and dry. The sweet potato is traditionally attributed with various positive properties. Many cultures value sweet potatoes as part of their varied diet.
Origin
The batate is native to Central and South America. It is cultivated in almost all warmer countries of the tropics, subtropics and temperate zones of the earth. The largest batate producer in the world is China. Batates are grown and harvested throughout the year. The largest supply on the German markets falls in the warm season. Important suppliers are Brazil and Israel.
In the meantime, sweet potatoes are also growing vigorously in Austria.
Tips
Red-fleshed batates are considered the best in terms of cooking properties and aroma.
Preparation
The following preparation is common: Wash the batates, peel them, prick them several times with a fork, rub them with oil and bake them in foil or cook them in the oven with the skin on. Prepared in this way, batates are an excellent side dish for fish and meat, especially game.
You can grill them and also make fries. You can also puree the sweet potato, make crispy pancakes, but also use it in casseroles or in delicious soups. Of course, the sweet potato is also prepared as a dessert. Even its leaves can be prepared as spinach. The sweet potato should not be stored in the cellar or in the refrigerator.
About the producer
We are running the Kartoffelhof Schramm in the fourth generation.
Initially, the farm was only five acres (2.87ha) large. Through hard work over generations, the farm was expanded through purchase and lease, whereby we have remained a family business and now cultivate 90ha of arable land. We cultivate our potato varieties with love and dedication far away from mass production, which takes place on large farms. You can taste it - the potatoes are full of flavor!
The Kartoffelhof Schramm and its fields are located on the northern edge of the Marchfeld, the so-called "vegetable garden of Vienna", where the fertile plain meets the northern hilly country, the "Tuscany of Austria", the Weinviertel. This region combines both advantages. The fertile soil type Chernozem, the black earth with a mighty humus-rich topsoil, as well as the warm loess, silt and sandy soils. The warm sandy soil and the strong Chernozem offer the best conditions for the cultivation, growth and the enjoyable taste of our high-quality products. True soil treasures!

Storage recommendation
Potatoes are sensitive to cold and should therefore not be stored in the refrigerator. However, they must be stored in a cool place. To prevent them from turning green in the light and forming the toxic solanine, it is important to store them in complete darkness.
