Fresh Pack Appenzeller
A Swiss, semi-hard cheese with a fruity and slightly spicy flavour, which it gets thanks to the tradition of washing the rind with white wine, pepper and other spices. It is made from raw cow's milk in the Appenzell region of north-eastern Switzerland and is matured for at least 3 months, during which time it acquires an intense, sweet aroma. It has a light colour and its consistency is flexible and easy to cut. This is one of the most famous Swiss cheeses.
Tip: Perfect as an ingredient for fondue. Served hot with prepared dishes, it gives them a distinctive aroma and a slightly sweet taste. It goes well with fruits such as grapes and figs. Its flavour is complemented by dry wine. Served on a cheese platter, it perfectly complements milder, creamy cheeses.
