The shiitake originally comes from East Asia, in whose cuisine the shiitake has had a firm place for many centuries due to its particularly aromatic and slightly garlicky taste. Its flesh is firm and juicy and shows a white to brownish colouring. All parts of the mushroom can be used.
It is particularly rich in vitamins of the B group and minerals such as calcium, potassium, iron, sodium, copper and zinc. Protein and vitamins A, D and C are also included.
The fruit body also contains seven of the eight amino acids essential for humans. Vegetarians and vegans get essential amino acids from shiitake that are otherwise only found in animal products and can thus supplement their diet in a sensible way.
In traditional Chinese medicine, it is even said to have healing properties. Among other things, it is said to regulate the immune system and have a beneficial effect on high blood pressure and cholesterol levels. It is also called the "king of mushrooms" there.

Mushrooms have hardly any fat, are also cholesterol-free and thus do not affect blood cholesterol levels. They are an important source of potassium, almost salt-free, and therefore good for high blood pressure. Since they contain only a few carbohydrates, they have little effect on blood sugar levels.
Mushrooms are good for the slim line and are an ideal food to control our weight and stay slim. They have a low energy density, are cholesterol-free and extremely low in fat and calories. They are good for our digestion as they increase colonic mobility and counteract hard stools or constipation by binding water in the large intestine.
