About the producer:
Really Scha(r)f is the organic farm Schreckgut ("Oberseidl") in Bischofshofen's Gainfeldtal. Here - on a well 300-year-old farm - master butcher Josef "Sepp" Mayer and his wife Michaela breed sheep, turkeys and pigs. The main focus is on sheep breeding with about 70 ewes, currently about 30 lambs and 3 breeding rams. The animals live in spacious stables and regularly graze on the fresh mountain meadows that surround the farm in lush green. In summer, a large proportion of the animals are grazing on mountain pastures at altitudes of 2,000 metres and more. This is where the mountain herbs grow, which make the meat of the animals so incomparably fine in taste. The butcher's shop and the adjoining farm shop are located directly on the farm. Here, the finest meat and sausage delicacies are produced and offered directly for sale.
The raising and care of the animals is always done by the Mayer family themselves. They are fed mostly with hay from their own farm. Large pastures provide the herd with additional fresh feed and adequate exercise. Through exclusive use of natural materials for the stables (wood and natural stone)an all-round healthy indoor climate is created.
