Usage
Dried dill should be avoided if possible, as it has a much weaker aroma compared to fresh dill.
If you want to make it last longer, it is better to freeze it.
Already cut dill can also be kept in the refrigerator for several weeks if it is kept moist.
The mild and herbaceous aroma of dill harmonizes best with fish such as salmon, trout or pikeperch. The dill is pounded together with basil, lemon, coriander, salt and pepper in a mortar to form a paste, the fish is rubbed with it or marinated and left to infuse in the refrigerator for at least 12 hours before preparation.
