The fruit has a slightly speckled, bright green skin when unripe. Granny Smith requires a hot climate and a very long growing period to fully ripen. The Granny Smith apples available in stores have generally been harvested well before they are ripe and therefore, like most unripe apples, have a very sour taste. Ripe Granny Smith apples look like fully ripe Golden Delicious apples with a reddish tinge on the sunny side and have a very balanced aroma. To achieve this quality, however, the apples usually have to ripen fully on the tree until February, even in California.
Granny Smith apples are also often used for baking and cooking.
Storage recommendation
Apples should not be stored in the refrigerator. They stay fresh best in dark, cool pantries.
