With their marzipan-like texture and a mild, slightly salty taste, matjes can be combined in many ways to create small moments of indulgence. Matjes is also known as "virgin herring" because herring that is processed into matjes has not yet produced any milk or roe. However, they have already accumulated a high fat content in preparation for reproduction. Ideally, a herring that is processed into matjes is three to five years old.
Why matjes is so healthy
- Matjes has a fairly high fat content of at least 12 to 28 percent, but it contains plenty of healthy omega-3 fatty acids, which keep both the cardiovascular system and brain function going.
