The classic Gaffel Kölsch is a particularly fresh Cologne beer speciality brewed with water, malt and hop extract according to a tried-and-tested family recipe and the German Purity Law of 1516.
The fine, pleasant, slightly hoppy taste is characteristic of this traditional product and clearly distinguishes Gaffel Kölsch from all other Kölsch brands.

With the blessing of the Federal Cartel Office and under the eyes of the then Lord Mayor Norbert Burger, the heads of 24 Kölsch breweries signed the Kölsch Convention on 6 March 1986.
This document, which is unique in the German beer landscape, is based in its main features on a judge's decision from 1980, which stated that Kölsch is not only a type of beer, but also a designation of origin. Accordingly, only breweries located in Cologne are allowed to brew and distribute Kölsch, with the exception of breweries that have always brewed Kölsch, even if they were or are not located in Cologne.
The Kölsch Convention aims to prevent outsiders from tampering with, adulterating or diluting Kölsch. It created binding competition rules and regulations for the members of the Kölner-Brauerei-Verband, to which all Kölsch breweries voluntarily submitted.
So it was bindingly established that Kölsch is a top-fermented, pale, bright, highly fermented, hop-accentuated full beer and is brewed according to the German Purity Law of 1516. In addition, the brewers are committed to Kölsch only being tapped into the Kölsch-Stange, the traditional slender, cylindrical glass. Similarly, the designation of origin "Kölsch" should always be clearly recognisable in the external presentation, i.e. on all containers, packaging and in advertising.
