The plaice (Pleuronectes platessa) is one of numerous flatfish and can be found in cold, saline waters in Northern and Central Europe. The flounder, as the plaice is also called, lives flat on the seabed and lies in wait for its prey there. Close relatives are the turbot and halibut.
Taste and preparation:
The tender plaice meat is bright white and tastes more intense and less sweet than that of other flatfish.
There are many ways to prepare plaice. Classically baked in breadcrumbs, or rolled and gently steamed, through to the rustic version with bacon.
This product comes from a fishery that has been independently certified according to the Marine Stewardship Council standard for a well-managed and sustainable fishery.
