The sea bass (Dicnetrarchus labrax) is also called Loup de Mer and is one of the most sought-after food fish. Typical of the exterior of the predatory fish are the black-marked gill covers and the serrated dorsal fin. In addition to the North Sea, its home is primarily the Eastern Atlantic and the Mediterranean.
Taste and preparation:
The white flesh of the noble fish is firm and tender at the same time and has a fine aroma of its own.
The sea bass can be wonderfully prepared whole, whether on the grill or in the oven. It is also the classic fish for preparation in a salt crust. Simply mix coarse sea salt with a little water and cover the fish with it all around and cook in the oven.
